Collagen is the main structural protein of connective tissue. Connective tissue is what surrounds and threads through our organs, vessels, muscles and bones. It gives us our shape , our strength and flexibility.
Collagen can be broken down by ‘collagenase’ in the system, which is present with chronic inflammation. Too much sugar and vegetable oil in the diet will also promote this state in the body.
